浸泡方法:
1、鱈魚膠浸半小時,隔水蒸8分鐘至稍稍變軟,不用開蓋,直接焗至水冷卻。

2、沖洗鱈魚膠,再用乾淨的冰水浸12-24小時,途中換一次水(放雪櫃浸)。

3、浸發後的鱈魚膠可按份量分開幾份,放在冰格雪藏,需要時解凍即可烹煮。

鱈魚膠不用洗直接蒸,遇熱會變軟變曲,目的是殺菌
有質素的花膠不帶腥味,無需下薑、蔥、酒,只需用清水便可
⚠️⚠️切記所有器皿必須清洗乾淨,確保毫無油份才可以開始浸發花膠

食譜💁🏻花膠燉竹絲雞🐔湯(燉)
材料:花膠4塊、竹絲雞半隻、石斛8粒、蜜棗3粒、酒1茶匙、鹽🧂適量、薑數片、葱少許、滾水5碗
做法
1. 花膠以凍水浸發過夜,其間可放在雪櫃內。
2. 用薑、葱將花膠氽水10分鐘,蓋上蓋子,待花膠回復至室溫。
3. 竹絲雞🐔斬件,除去內臟及洗淨備用。
4. 再煲滾一鍋熱水,將竹絲雞🐔氽水。
5. 將竹絲雞、石斛、蜜棗及酒等加進燉盅,再倒入滾水至7成滿,蓋上蓋子,以慢火隔水燉3小時。
6. 加入花膠後再慢火燉1小時,加鹽調味,即成。
